Description of Work
I am a Research Associate Food Technologist with USDA-ARS, and my primary research focus is sweetpotato processing and chemistry. The goal of my research is to provide value to the US sweetpotato industry through fundamental and applied research.
Research Interest
Investigating sweetpotato traits that are beneficial for table stock, processing (e.g., chips, fries, dried), and nutrition.
