North Carolina Processing and Products Academy

The Processing and Products Academy (PPA) workshop will include topics on primary, secondary, further processing, meat chemistry, meat quality and defects, process improvement, products, and safety for 1 days. This short-course will also include hands-on activities for 1.5 days at the Processing Plant in the Chicken Education Unit on Lake Wheeler Road and/or the Meat Lab at Schaub Hall on campus.
