Afsana Rahaman Munmun completed her B.Sc. in Food and Nutrition from the University of Dhaka, Bangladesh, in 2023. She is now pursuing an M.Sc. in Food Science with a major in the Department of Food, Bioprocessing, and Nutrition Sciences at North Carolina State University (NCSU), along with a co-major in Poultry Science through the Prestage Department of Poultry Science at NCSU. She is currently the only graduate student from Bangladesh in both departments. She is working as a graduate research assistant in Dr. Yan Campbellā€™s lab in the Poultry Science Department. Her research focuses on food safety, poultry product processing, and the development of poultry products, with her current project investigating the shelf life, protein quality, and functionality of liquid eggs. Beyond her academic pursuits, Afsana enjoys exploring new places, connecting with nature, and engaging in travel and nature photography. She also loves meeting people from diverse cultures and exploring traditional cuisines from around the world.
