Bio
Dr. Yan Campbell is an assistant professor & extension specialist for Processing and Products at NC State. She earned her bachelor’s degree in Biosecurity in Hunan Agriculture University, her master’s in plant pathology and Ph.D in Food Science and Technology at Mississippi State university. Her extension and research programs include primary, secondary and further processing, with a focus on poultry meat quality, process improvement and efficiency, product shelf-life and development, and muscle and egg chemistry and biochemistry.
