Caren has helped to design and facilitate youth and adult nutrition education programs that promote and sustain healthy food options and behavioral education strategies for limited-resource populations. Caren also is involved with Policy, Systems and Environmental Change activities at various partnership sites in Wake County that enhance and sustain community health through nutrition education, physical activity and garden initiatives. Caren motivates and coaches youth and adults to improve their nutrition and health through access to classroom and virtual nutrition education classes and move more through physical activity initiatives.
Caren also acts as a mentor/preceptor to undergraduate and graduate nutrition students, as well as dietetic interns in North Carolina. Caren has developed and implemented a Community Nutrition/ Public Health Dietetic Internship Rotation collaborative with UNC, Meredith College, North Carolina Central University and Appalachian State University.
Caren has been affiliated with SNAP-Ed Steps to Health for over 6 years. Caren has developed and sustained Wake County community partnerships with Telamon Head Start, Salvation Army, Community Centers and Low-resource apartment complexes. Caren has also collaborated with other Wake County organizations to provide opportunities for healthy communities in Wake County.
