Celebrate the fall with fresh and delicious NC sweet potatoes. Sweet potatoes are an excellent source of Vitamin A, Vitamin C, Iron, Calcium, Magnesium, and Potassium. They are also rich in healthy antioxidants such as beta-carotene and are a great source of fiber. This sweet potato hash recipe from NC State University’s Steps to Health Program makes a great side dish for any fall gathering, providing a delicious and healthy twist on a classic favorite: hash.

To cook on the stove top or in an electric skill:
2. In a large skillet, heat 1 teaspoon of olive oil over medium high heat.
3. Spread potato mixture in the pan in an even layer, pressing down lightly with a spatula.
4. Cook for about 5 minutes or until golden brown
5. Flip and cook on the other side for an additional 3-5 minutes.
6. Add cinnamon, salt, and pepper to taste and enjoy!
OR
To cook in the oven:
Spread on a large pan and drizzle with 1 teaspoon of olive oil.
Bake at 375 degrees Fahrenheit for 15 minutes. Turn with a spatula and bake for 15 minutes more.
