Last week, Dr. Mindy Brashears stopped by 512 Brickhaven Drive to watch a food safety demonstration of an ongoing research project in the new Dinah E. Gore Teaching and Research Kitchens.
Brashears is not only a food safety expert, she is also the U.S. Department of Agriculture’s (USDA) Deputy Under Secretary for Food Safety.
In this research study USDA, RTI International and NC State are partnering for five years to understanding how pathogens travel around home kitchens.
Dr. Ben Chapman and his lab are hosting the research trials and welcomed the chance to share details about the study thus far with Brashears and RTI International. One exciting point about this project for Chapman has been the ability to adjust and modify study practices based on the data they have collected as the study progresses.
